This is a lovely accompaniment to a meal. I put it with sausages, grilled chicken and fish, lamb or on its own as a nice warm lunch. It’s really cheap and easy to make. I tried it with giant cous cous and it works well too.
Ingredients
Olive oil
1 onion finely chopped
1 red pepper finely chopped
2 tbsp tomato puree
Salt and ground black pepper
200g bulgar wheat
generous knob of butter
500ml, veg or chicken stock
Method
Heat around a tablespoon of olive oil in a saucepan. Soften the onion without colouring too much and then add the red pepper. Stir for another minute.
Add the tomato puree, salt and pepper and cook for a couple of minutes on a low heat.
Add the bulgar wheat, butter and stock to the pan and stir until all the ingredients have combined well.
Put on the lid for 15-20 mins, using a low heat. Make sure all the liquid has been absorbed and serve immediately!
